I have been sick for what feels like forever. It’s been over a week since I had any motivation to move my body, cook a meal or really do anything other than binge watch The Office and stand up comedy. But, it’s important to listen to your body, so thats what I have been doing! 😉
I’m finally feeling up to doing something, (still not feeling 100%) so I thought I would pop in and write a quick post to share some of my quick, go-to foods that I’ve been loving!
- So, I know I said that I haven’t been cooking, but I still had the energy to make a quick batch of Kylie’s Apple Crumble Breakfast bars. Except instead of making layers, I simply diced up the apples/ folded them into the batter and baked then into muffin tins. SO GOOD. Each recipe I try from Kylie continues to amaze me! I think I’m going to have to make every recipe on her blog
2. Since I’ve been home all week, I was able to have a real breakfast. Insert: this meal! Two slices of Eurekra thinly sliced seed bread topped with Earth Balance, fried eggs and an apple.
I am obsessed with The Office. I think I’ve mentioned this 110 times in the past week, but I binged watched it and now I want to go back and watch it all again… please tell me I’m not crazy haha! With that being said, I’ve been loving to snack and watch netflix. Yes, we are taught to eat without distraction, but sometimes it just makes more sense (and is much more enjoyable) to have a handful of pretzels or a scoop of ice cream and lay in bed.
